One-to-one in-class coaching & mentoring with Ribana.
The training day will start at 9 am and finish at 6.30 pm with a 30-minute lunch break.
This type of tuition is suitable for intermediate to advanced level students, used with the intensive rhythm specific for a busy kitchen/ cake shop and for a baker/ decorator looking to start a business from home or a small retail unit.
You can choose the subjects/ topics you would like to learn on the day, and Chef Ribana will create a lesson plan for you to agree on before booking so you'll know exactly what to expect.
The date/s of the class will be set by mutual agreement.
All consumables, materials, and equipment needed for the class will be provided; lunch and light refreshments are also included in the price.
Suppose the topic agreed upon includes/ covers business aspects such as a business plan, writing/ updating the menu, price calculation, etc. In that case, students will receive an electronic document ( pdf, spreadsheet) to include all details required as per agreement.
The business topics available to book are :
- setting up and running a baking & cake decorating from home or a retail shop
- teaching cake baking and decorating
The hands-on training in baking & cake decorating ( advanced level) to include topics such as:
-patisserie( mirror glazed & velvet texture entremets, mousse cakes, gateaux, vegan baking, macarons, free-from,etc)
-isomalt & hot sugar
-figurine modelling -painting (using an airbrusher, natural sponge, brushes, etc., with watercolours and cocoa butter on various edible surfaces)
-sugar flowers ( made out of gum paste, edible paper, chocolate )
-piping ( royal icing, chocolate, buttercream)
-fondant work ( modern textures, decorations)
-sculpted cakes ( including gravity-defying)
-Cake design and competition work
For course creation, access to equipment/software needed will be included, so there will be nothing extra to pay while attending the training.
The student will have to sort out access to the recommended platforms after completing the training to be able to use them.
