Students will learn how to work with fondant, gum paste and modelling paste to create stunning sugar paste-based projects during this course.
Most modern cakes are decorated using innovative techniques that require a good understanding of manoeuvre sugar pastes. The course will reveal the secrets behind decorating such beautiful cakes and help you achieve incredible results quickly.
During this course you'll learn how to:
-condition, roll and cover a cake and a board with fondant, apply the ribbon
-colour the fondant using gel colours, pre-coloured fondant and an airbrusher
-decorate and stack a 3 tiered round cake
-decorate a square/oblong cake
-achieve sharp edges, vintage, fabric, stone, cracked, wood, lace effects
-make sugar bows, non wired statement flowers, inlay decorations
-hand model pet and human figurines ( bride & groom, elephant, giraffe, dog, cat)
-make grass, trees, cobblestones, toadstools, Perles,
-paint on sugar using water and fat-soluble colours
-make the glass effect using glucose and piping gel
-decorate cookies, cake pops, cupcakes and set a candy bar
-carve( sculpt) and decorate 3 different cakes : a handbag, a shoe( trainer) and a pet( dog)
All the above topics will be explained and demonstrated using clear printable, visual and audio instructions, close-ups/ multiple angles footages.
You will have access to the printable recipes if you want to practice your baking skills and make the cakes, cookies, cupcakes, and other desserts you'll have to decorate to complete your assignment.
The course will also cover various business aspects of starting a cake decorating business from home. Essential steps which you need to follow to get your business registered and approved( UK based students only).
Ribana, your instructor will discuss important topics as:
-register your business, get your health & hygiene certificate, get a business insurance
-choose your legal status, tax matters,
-how to price your cakes
-advertise your business based on a low budget
-start building your online reputation
-get the necessary equipment
-pick the right suppliers
-build a portfolio
-deliver your orders
The price you pay covers:
- the tuition fee ( 15 hours live online tuition, over 30 hours offline tuition )
- the equipment( PME student kit & book)
- part of the consumables needed for doing your own projects based on the topics learned during the course ( 0.5 kg white gum paste, 1 kg modelling paste( mix of colours), 2 kg fondant, a selection of gel and dust colours)
- three months access to all printable, audio and video material ( instructions and recipes) needed for baking the cakes, making the fillings, cookies, cupcakes which you'll then use to decorate throughout this course. Also recipes for making your own gum paste, fondant and modelling paste.
The PME student kit, book, and few consumables will be posted, and you will receive them within a week after completing your booking( paying in full).
Along with the consumables which will be sent out to you you'll also need the following:
-cake boards: one round 12" and 2 oblongs 9/12"
-real cakes ( or dummies) round : 4",6",8" one of each 4" deep and one square 6" cake 3" deep
-slab of cake 9"/12", 1 kg buttercream
-cookies, cupcake, cake pops at least 2 of each
-edible markers ( optional)
-brushes for painting
-icing sugar for rolling sugar paste
-single-use gloves ( for colouring)
Part of the course will consist in live sessions, 3 hours per week, so before booking, you must make sure you will be available to attend each session, using a video and audio connection to allow you to interact with your instructor.
A MAXIMUM OF 4 STUDENTS PER SESSION
You will be able to ask questions and communicate with your instructor Ribana who will happily answer all your questions about the subject.
Live sessions will run one day per week for five consecutive weeks, from 6.30 pm to 9.30 pm ( UK time). Doors will open from 6.20 pm and close at 6.30 pm. Ribana will cover many topics related to the skill of working with sugar paste.
During each live session, she will demonstrate while answering your questions, each technique included in the course's topic.
All videos (offline and live recorded) will be available for you to watch at any time three months from the course's starting date.
Having all the necessary equipment and consumables ready for the class will help you to create your projects during the live sessions simultaneously with Ribana. If you need more execution time, you can complete the homework offline, submitting the photos/ videos showing the results at your convenience. Close up photos/ videos showing the final projects (tasks) will have to reach us for evaluation.
If the craft level meets the criteria at the end of the course, you will be receiving the PME professional diploma sugar paste course.
For your final assessment, you will have to send us to close up ( step by step) photos/ videos of a decorated 3 tiered cake, a decorated cake with corners( either square or oblong), one decorated carved cake, 2 decorated cookies and 2 cupcakes, 2 hand modelled figurines of your choice.
On preparing your projects, you can use your own designs or reproduce the designs taught by your instructor during the course, your choice.
A MAXIMUM OF 4 STUDENTS PER SESSION
Our suggestion will be to use real cakes to practice if possible. You will gain a better understanding of how to control the fondant at different temperatures and humidity.
The assessment will not consider your baking skills, so if you prefer, you can use dummy cakes where possible. The carved cake project will be based on a real cake.
In case you need more time to practice accomplishing the expected results, you can submit your homework within three months from the date the course will end. Sending the photos later than three months will incur a £10 charge.
In case the quality of the artistry does not meet the criteria, you will need to redo the projects and resend the results. Starting with the third submission, a charge of £ 10 will be payable for each reassessing session.
If you cannot attend a live session for any reason, this will be available for you to watch it recorded. You cannot miss more than one live session, so make sure you can attend the dates selected when you proceed with your booking. If something unpredicted will happen after booking the course, you will be able to transfer the booking for the following session after paying a £ 30 admin fee.

4. Join the live class on the dates & time specified in the booking, watch the live presentations, demonstrations, ask questions and interact with your instructor and colleagues. Start creating the projects during the live session and continue after to complete.
5. Send photos/ videos of your completed projects for evaluation to qualify for obtaining your PME professional diploma sugar paste module.
6. Receive your PME professional diploma certificate through the post after completing the course.
